Unleavened:

Unleavened bread is bread that has been made without yeast, or leaven, so that is will not rise.  Unleavened bread would be more akin to a cracker than to normal bread made with yeast.

The Jews celebrate their Passover feast using unleavened bread.  It is to symbolically represent the haste in which they left Egypt (that is, they did not have time for the bread to rise) after the first Passover celebration.

Today, some followers of Jesus carry this practice over to communion, by using unleavened bread or crackers.
